Roasted lamb sirloin with turmeric cabbage & sauteed kale


Winter is here and I find myself using the oven a lot! It is a quick way to cook food and usually pretty easy to clean up too. Though I have to say, it helps to have a husband that cleans up! :)

Part of the challenge when using a seasonal vegetable basket delivery is that you need to be creative with what you get, we had cabbage and kale left over so I had to think of the best way to cook them. The organic lamb sirlion was also purchased through www.farmy.ch

Ingredients:

Lamb sirlion 200g

4 cloves of garlic- minced

1 tablespoon of organic ghee or grassfed butter

1 teaspoon of dried oregano

4 tablespoons of coconut oil

1 small head of white cabbage

1 teaspoon of organic turmeric powder

1 cup of filtered water or vegetable stock

2 heads of kale

1/2 teaspoon of dried chilli flakes

Himalayan salt to season

Servings: 2

Directions:

Lamb sirlion

1. Take the lamb sirlion out of the fridge an hour before cooking

2. Preheat oven to 200 degrees

3. In the meantime, minced all 4 cloves of garlic (I'm lucky to have a husband who loves doing it! :))

4. Arrange ghee on top of lamb sirlion, season with salt, sprinkle some minced garlic (about one clove portion) and dried oregano

5. Place lamb sirloin on roasting rack and roast in oven for 20 minutes (I usually love to eat lamb medium rare but because I am pregnant I have to eat well done meat)

6. Leave lamb sirloin to rest for about 5 mimutes before cutting

Turmeric Cabbage

1. Bring a large pot of water to boil

2. Slice cabbage into thin shreds

3. Blanch sliced cabbage in boiled water for about 1 minute and drain

4. Heat 2 tablespoon of coconut oil in wok over medium heat

5. Stir fry 1 1/2 clove of minced garlic until fragrant

6. Add the blanched cabbage and cook till tender about 5 minutes

7. Add in turmeric and mix evenly, cook for another 2-3 minutes, do a taste test to see how soft you want your cabbage to be. I like mine not too soft.

Sauteed Kale

1. Prepare your kale into small bite-size pieces and then wash thorougly

2. Heat 2 tablespoon of coconut oil in wok over medium heat

3. Stir fry 1 1/2 cloves of minced garlic until fragrant

4. Coat kale evenly in coconut oil in the wok, cook for 5 minutes

5. Add a cup of filtered water or vegetable stock if you have some handy

6. Sprinkle chilli flakes mix well and cook the kale till wilted about 5 minutes
